¾ cup butter or margarine, softened
½ cup granulated sugar
½ cup firmly packed brown sugar
1 egg yolk
½ t vanilla
1 ¼ cups sifted all-purpose flour
¼ t salt
½ t cinnamon
1 cup quick rolled oats, uncooked
1 egg white
¾ cup chopped sliced blanched almonds
Heat oven to slow (275º). Beat butter and sugars together until creamy. Beat in egg yolk and vanilla. Sift together flour, salt and cinnamon. Add to creamed mixture, blending well. Stir in oats. Spread in ungreased 10x15 inch jelly roll pan.
Beat egg white until frothy. Brush over top of cookie dough. Sprinkle with almonds; lightly press almonds into dough. Bake in preheated oven for about 45 minutes. Cut in bars while warm. Makes 6 dozen.
