This is a quick and hearty dish for those days when prep time is short.

 

¼ box (4 oz) rotini macaroni (sometimes called scroodles)
1 C diced ham or smoked sausage
2 T olive oil
½ onion, diced
½ green pepper, diced
1 16 oz can diced tomatoes
½ C grated cheese
 
Cook the rotini according to package instructions.
Sauté the onion and green pepper in the olive oil.
Add diced meat and tomatoes and heat through.
Top each serving with grated cheese.
Serves 3 or 4.
