One of the Donoho Cousins, Jaquetta Walterscheid, contributed this recipe to their 2004 cookbook.

2 pkgs frozen chopped spinach, cooked and drained well
1 lg. onion, finely chopped
¾ C butter
1 T fresh black pepper
½ t thyme
3 C herb stuffing mix, crushed
6 well-beaten eggs
1/3 C Parmesan cheese
1-1/2 t garlic salt

Combine all the ingredients and roll in ¾ inch balls. Place on cookie sheet and bake at 325° for 15 to 20 minutes. Yield: 4 dozen
