Cousin Joy says this is a great recipe, and you don’t need a double boiler to make it.

3 C milk
3 egg yolks (You can use whole eggs if you don’t want
the whites for meringue)
¼ t salt
1 C sugar
3 T flour
3 T cornstarch
1 C coconut
1 t vanilla
2 T butter

Combine first seven ingredients and cook over a hot fire, stirring constantly to prevent burning. Cook until boiling and thick. Remove from heat. Add butter and vanilla and cool. Pour into pie shell.
Note: To make this a banana cream pie, leave out the coconut and add two sliced bananas in the pie shell before pouring on the pudding. For chocolate pie, leave out the coconut and add three tablespoons cocoa into the mix.
