This is a favorite and it’s always good, but it’s important not to make too many substitutions. This is a reprint of the 2006 recipe.

3 lbs frying chicken cut in pieces
1/3 cup seasoned flour
1/4 cup butter (do not substitute for the butter)    
1 can condensed cream of chicken soup
2 1/2 T grated (or finely chopped) onion (more is o.k.)
1 T chopped, dried parsley
1/2 t celery flakes (more is fine)
1/3 t ground sage
1 1/3 cups water
1 1/3 cups Minute Rice

Roll chicken in flour. Saute in butter in a skillet until golden brown. Remove chicken from skillet to a plate. Combine soup, onion, and seasonings in skillet. Gradually stir in water. Bring to a boil over medium heat, stirring constantly. Pour rice into a 13 X 9 pan. Stir in all except 1/3 cup soup mixture. Top with chicken, and pour reserved soup mixture over the chicken. Cover with aluminum foil and bake at 375 degrees for 30 to 40 minutes or until chicken is tender. Makes 4 servings.

Suggestion: When you are cleaning fresh celery, save the leaves. Put them in an open container (like a strainer) and let them dry for several days. When thoroughly dry, crush them a little and store them in a tight container (an old spice jar is good). It’s much, much cheaper than purchased dried celery leaves and every bit as tasty.
