This is an easy and pretty dish that serves 4. It is easily doubled. The sausage is optional.

½ pkg (6 oz) bow tie pasta
½ t salt
1 T butter
1 can diced tomatoes, drained
1 small green pepper, diced
1 medium onion, diced
1 C grated cheese (MontereyJack and cheddar blend)
1 lb. Eckrich smoked sausage cut in bite-sized
pieces (heated) [optional]

Boil pasta until soft in salted water. Drain. Stir in butter. Add drained tomatoes, peppers, onion, cheese and pre-heated sausage. Toss to mix.
