These muffins won the Muffin Contest sponsored by Farm Wife News in 1984. They were created by Marlene and Debbie Fudge. Anything with bacon in it is probably going to be good, and these are.
½ lb sliced bacon
1 C flour
1 C yellow cornmeal
1 T sugar
4 t baking powder
½ t salt
1 8-1/2 ounce can cream-style corn
½ C milk
1 egg, slightly beaten
¼ C bacon drippings
Fry bacon until crisp. Drain on paper toweling; crumble. Reserve ¼ C bacon grease.
Combine flour, cornmeal, sugar, baking powder and salt. In a small bowl whisk corn, milk, egg and bacon drippings. Using a spoon, stir corn mixture into flour mixture just until flour is moistened. Fold in crumbled bacon. Divide batter into 12 greased muffin cups and bake at 425° oven for 15 minute. Good warm or cold.
