This recipe works well for either blueberries or bananas.

 

½ C rolled oats (I used Quick Oats and it worked)
½ C orange or apple juice
1 large egg, slightly beaten
½ C vegetable oil
1 ½ C flour
½ C sugar
1 ¼ t baking powder
¼ t baking soda
½ t salt
Topping:
2 T sugar
¼ t cinnamon
1 C blueberries or bananas (about 2 very ripe mashed bananas, mashed)

 

Preheat oven to 400°.
Grease and flour 12 cups in muffin tin.
Combine oats and juice.
Whisk in egg and oil.
In separate bowl, sift flour, sugar, baking powder, baking soda and salt.
Add to oat mixture and blend.
Fold in blueberries or bananas.
Fill muffin tin cups 2/3 full.
Top with sugar/cinnamon mixture.
Bake for 18 to 22 minutes or until muffins spring back when lightly pressed with a finger.
