Karen’s Corner Elanore’s Cabbage & Jello Salad

This was one of my mother’s old standby recipes.

2 pks lemon or lime Jello
3 ½ C water
¼ C cider vinegar
Juice of one lemon
2 t salt
Scant 2 C sugar
Cabbage - at least 2 cups, chopped
1 can/jar pimento, diced
2 C diced celery
1 green pepper, diced
1 small onion, diced

Make Jello according to package directions, using 3 ½ cups water.
Add the rest of the ingredients.
Fits in a 9” x 13” dish. Refrigerate until set.
