Karen’s Corner: Baked Apple Dumplings

I thought I knew what apple dumplings were, but these found in a 1911 cookbook are different.

1 pint apple sauce
2 C flour
1½ t baking powder
1 t salt
2 T butter
Milk

Fill muffin tins half full of apple sauce. Sift together the dry ingredients, work in butter, and add enough milk to make a soft batter.
Fill the muffin tins with the batter, and bake in a quick oven.
Serve with cream or hard sauce.

Hard Sauce:
1 C powdered sugar
¼ C butter
1 t vanilla
1 t brandy

Beat all together till creamy, and pile on a glass plate.
