Karen’s Corner: Jell-O Fruit Salad PDF Print E-mail

 I wanted to make a fancy Jell-O salad, but every recipe I found used little marshmallows and/or Cool Whip, and I didn’t have either of those in my “larder.” I finally found a recipe that used, of all things, salad dressing and evaporated milk. Those I had, so that’s what I made, and it’s pretty darned good, too.

1½ C fruit cocktail (2 15oz cans) drained
1 C juice from fruit cocktail
1 (3 oz.) package lemon Jell-O
1/3 C salad dressing (I used Miracle Whip)
¾ C evaporated milk (not Condensed milk)
1 T vinegar
1/3 t salt (optional)

Heat the juice to boiling and add Jell-O. Stir until the gelatin is dissolved. Remove from heat and let stand to cool off a little. Whisk together salad dressing, evaporated milk, vinegar and salt. Stir into Jell-O mixture. Fold in fruit cocktail. Chill. This fits fine in a square glass cake pan.
